Description

Chardons are looking for an Executive Chef to run all our chefs and the kitchen teams in our 12 top-ranking high-quality catered Chalets and Hotels in Tignes and Val d’Isere (250 beds per week/ 3,000 plus clients per season).

Forming a fundamental part of our Senior Operations Team that manage hands-on all in-resort operations (working day to day alongside the Resort & Guests Services Manager and Head of Logistics & Operations). Working closely together the Senior Operations Team are responsible for delivering every aspect of our in-resort services delivered via our hospitality team and maintaining our existing high levels of quality and service standards.

Chardons strive to deliver the absolute best quality service standards and pride ourselves on our current high-quality reputation frequently punching above our weight compared to other similar chalet companies (we have numerous number #1 and #2 ranked TripAdvisor positions for our chalets). Our food is constantly credited as beyond expectations/ excellent.

The Executive Chef will responsible for the day-to-day running and motivation of all Chardons chefs and kitchen staff (diverse team of x 20).

They will be responsible for all the chefs training and will act as a mentor throughout the season. In a seasonaire environment, this can include a wide diversity of people (differing ages, skill sets, life experience etc) and the applicant must have the ability to motivate and drive all walks of life in positive, friendly yet professional manner.

This is a hands-on role and requires much of your day to day work to be carried out in the chalets/ hotels/ stores: training staff, running and motivating staff, checking service standards, quality control of products, tasting samples, signing of hygiene standards  etc

This is a year-round role, we have clients in the resort in the Winter and Summer. We are looking for someone with a minimum commitment of 2 years to help facilitate a smooth transitional period during a recent expansion of the business.

This is not a superficial job title/ seasonaire type role, this is a high pressured key role in our business that we are looking for someone to take full ownership of and consistently deliver exceptionally high service standards.

Reporting directly back to the in-resort owners of the business weekly with all essential information.

The business is going through a period of growth and expansion and the owners are seeking to pass the entire optional side of the business allowing them to take a back seat position and focus on other business opportunities.

Requirements

This role would suit someone who could see the benefit of living in world-class ski resort in the winter and biking/hiking/ outdoor sports mecca in the summer.
There would be an expectation this person would make time to ski regularly and enjoy what the area has to offer.

Must have previous experience in a similar role and be used to managing a varied team of people. You will need to have comprehensive knowledge of kitchen hygiene, ordering, menu planning, purchasing, inventories and stock control as you will be managing and training your staff in all aspects.

Positive, flexible and adaptable attitude is essential with a sense of fun and willingness to help out in any of the chalets if needed. This is not a cooking role but you will be required to cover shifts and step in if required as a relief chef with minimal notice.

Experience of working in a similar role in the ski industry is very advantageous and it would be very desirable if they have direct experience of dealing with any of the following: local products, client’s meal expectations on a catered ski holiday, managing in-resort compliance-based issues (such as hygiene regulations) and French-speaking.

We are also recruiting for a Resort and Guest Services Manager and would consider a couple.

The initial starting package would include:-
