Description

This is a very demanding but extremely rewarding role with responsibility for the catering service in our flagship Chalet Chardon. The emphasis in this role is the ability to work alongside the Head Chef to deliver a luxury catering service of the highest possible standard.

Assisting the Head Chef in our flagship Chalet Chardon your duties will involve:

  • Menu design, planning and costing with close attention to budgets
  • Shopping; online ordering of supplies, visiting local suppliers
  • Managing stock in your kitchen
  • Preparation and service of breakfast, afternoon tea, canapés, three course evening meal, petit fours, ski room snacks, and transfer picnics
  • Catering for children and nannies (including lunches and children’s’ teas when required)
  • Planning and preparation of staff meals
  • Catering for guests’ special dietary requirements and allergies
  • Catering for special occasions and guests’ wow’s
  • To be responsible for food hygiene and general health and safety in the kitchen and dining areas
  • Keeping the kitchen clean, tidy and presentable, logging fridge temperatures and observing fridge and freezer rules
  • Assisting with the maintenance of all kitchen facilities and equipment
  • Opening and closing the chalet to our exacting standards
  • Working closely with Chalet Team and assisting with duties to ensure efficient running of chalet and the highest of standards are being met
  • You may be asked to work in another chalet in the event of sickness or injury. 

Requirements

This role would suit individuals with the following skill set: 

  • Recognised catering qualification or extensive experience
  • Previous work experience in a fine dining, Rosette or Michelin star restaurant but still wanting to learn more your skills from the Head Chef
  • Experience in different Cuisine for example; French, Italian, Asian, Russian etc.
  • Good interpersonal skills
  • Excellent time management and organisational skills
  • Fluent English, conversational French (preferred)
  • Knowledge of ski resort/season life.
